Apple Doughnut Delight


Batter fried apple doughnuts dipped in sugar syrup and served garnished with nuts


• Apples 3 medium

• Lemon juice 1 tablespoon

• Oil to deep fry

• Refined flour (maida) 1 cup

• Rice flour 2 tablespoons

• Fruit salt 1/2 teaspoon

• Yogurt 1/4 cup

• Sugar 500 grams

• Milk 3 1/2 tablespoons

• Cocoa powder for dredging

• Icing sugar for dredging

• Pistachios,sliced 12

• Almonds,sliced 12


Mix all the batter ingredients in a bowl and whisk thoroughly. The batter should be of pouring consistency and not lumpy. Cover and keep aside for five minutes. Take three cups of water and sugar in a deep pan. Mix thoroughly. Heat, stirring continuously, till sugar dissolves completely. Add milk. Remove the scum that rises to the top to get a crystal clear syrup. Keep syrup warm. Wash and core apples and slice them with the skin, into roundels of approximately one-fourth centimetre thickness. Keep in water to which lemon juice is added to avoid the apple slices from turning black. Heat sufficient oil in a kadai. Dip the apple slices in the batter and deep-fry on low heat till golden brown. Drain and soak in sugar syrup. (The sugar syrup should be warm and not hot). Remove from the syrup and arrange on a plate. Dredge with cocoa powder and icing sugar and sprinkle with sliced pistachios and almonds. Serve hot.
